At the core of this knife is Apex Ultra — a modern, high-performance tool steel developed specifically for elite kitchen knives. Engineered for exceptional toughness, edge stability and refined grain structure, it takes and holds a razor-sharp edge with remarkable resilience. This is contemporary metallurgy at its finest.

Encasing that performance core is something entirely different.

The cladding is genuine wrought iron — a material rooted in centuries of blacksmithing tradition. Unlike modern steel, wrought iron carries organic texture and visible history within it. The material we use is sourced and refined in the United Kingdom from upcycled relics of the past: old boat anchors, architectural ironwork from historic homes, abandoned wagon wheels and other remnants of the industrial age. Some of this iron can be hundreds of years old.

Polished and acid-etched, the iron reveals deep inclusions and flowing grain patterns reminiscent of aged timber. Above this, a rich kurouchi blacksmith finish crowns the upper blade. The deep, matte black surface creates striking visual contrast against the etched wrought iron below — raw yet refined, rustic yet deliberate. No two blades are ever alike; each carries its own story within the iron.

The blade itself is fully forged and tapered — thick and authoritative above the heel, flowing seamlessly to an ultra-thin, precise tip. Convex geometry and exceptional thinness behind the edge create effortless cutting feel and clean food release. The result is a knife that performs with modern precision while wearing the soul of another era.

The classic Rokkaku Hanmaru handle — crafted from Masur birch, Micarta, G10, and brass — complements the wrought iron beautifully, reinforcing the balance between refinement and heritage.

This knife is available exclusively in our traditional Japanese Gyuto profile — the versatile kitchen knife shape revered for its precision and adaptability in professional kitchens.

Each piece is fully forged by hand and made to order, one knife at a time. Please allow approximately 6–8 weeks for completion — a reflection of the craftsmanship and intention behind every blade.

2. Care Instructions

NEVER PUT YOUR KNIFE IN THE DISHWASHER OR LEAVE SOAKING IN WATER.

Cleaning: Clean by hand with warm water. Avoid wetting the
 handle when possible. 

Sharpening: We advise using whetstones to sharpen your knives. Over time you will get to know when your knives need to be sharpened, but with daily home use you will likely need to sharpen them once every 3-4 months. Using a honing rod or steel to maintain your bevel between sharpening will help.

Reactive steels: Reactive steels like Aogami Super, Apex Ultra or 1.2419 German tool steel are susceptible to rust if not properly cared for. In this case we advise that you keep knives dry between uses and when storing the knife for longer periods wiping the knife blade with Tsubaki oil or another food safe oil is a wise choice. This will not stop a patina
forming on the blade, but it will stop rust. A patina can be a beautiful personal feature on your knife and helps to stop rust forming. So, dry your knife regularly between uses, store in a dry place and apply some Tsubaki oil from time to time when storing for long periods. 

Caring for your knife handle: Your Birch and Bevel kitchen knife has an oak, birch bark and brass handle, which we have treated 
with a protective oil, but over time this will wear away. You can apply 1 or 2 drops of boiled linseed oil or Tru oil if you can find it. Natural bees wax or another food safe wax can be applied in addition.

Never apply hot wax or oil as you risk warping or damaging the handle.

Usage: Although your Birch and Bevel kitchen knives are made from the best steel available, heat treated and hardened using best in class techniques, it should be mentioned that these knives are designed for culinary use and not meant to be used to cut hard materials like bone or frozen produce.
